Bombay Masala Burger, Madrasi Khatto Daal And Haryali Cheelay by Chef Gulzar

Ingredients For Bombay Masala Burger:

  • Bun 4
  • Butter to fry

For Bhaji:

  • Boiled spinach 1 cup
  • Chopped carrots 100 gm
  • Peas 100 gm
  • Potatoes 150 gm
  • Cauliflower 200 gm
  • Chopped tomatoes 3
  • Chopped onion 2
  • Ginger garlic paste 1 tbsp
  • Lemon juice 2 tbsp
  • Turmeric 1/2 tsp
  • All spice powder 1 tsp
  • Butter 3 tbsp
  • Salt to taste

For Garnishing:

  • Chaat masala 1 tsp
  • Chopped green chilies 2-3
  • Chopped onion 2
  • Butter 2-3 tbsp
  • Green coriander to garnish

For Raita:

  • Yogurt  1 cup
  • Roasted and crushed cumin 1 tsp
  • Red chili flakes 1 tsp

Method:

For Making Bhaji:

  1. Take a pan add chopped and peeled potato, boiled spinach, carrot, chopped cabbage, chopped tomatoes and peas.
  2. Pour water, mix and roast it.
  3. Take a pan add butter, chopped onions, chopped garam masala, ginger garlic paste and lemon juice mix and roast it.
  4. Then mix the mixture with vegetables, let it cook.
  5. Now mash it on low temperature, cook it.

For Making Bun:

  1. First cut the bun, pour butter and fry it.

For Making Raita:

  1. Take a mixing bowl add yogurt, chopped and roasted cumin, chopped red chilies and salt beat it well 
  2. Raita is ready.

Method For Serving:

  1. Take a serving platter put that bhaji on it. Now add butter.
  2. Then add chopped green chilies and chaat masala.
  3. Add chopped onions and green coriander for garnish.
  4. Then add yogurt raita, serve it with hot bun.

Ingredients For Madrasi Khatto Daal:

  • Brown lentil 100 gm
  • Yellow lentil 100 gm
  • Spinach 150 gm
  • Ginger garlic paste 2 tbsp
  • Onion 2
  • Green chilies 5-6
  • Red chili powder 1 tbsp
  • All spice powder 1 tbsp
  • Mustard seeds 1 tsp
  • Cumin  1 tsp
  • Whole red chilies 4-5
  • Curry leaves 2
  • Tamarind paste 4 tbsp
  • Butter 4 tbsp
  • Oil  4 tbsp
  • Salt to taste

Method:

For Daal:

  1. Take a pan pour oil add chopped ginger garlic paste and onions for frying.
  2. Then add roasted beef and water let it cook and keep it on a side.
  3. Then add yellow lentil in a pan.
  4. Now add chopped red chilies, chopped garam masala, salt garlic paste and water let it cook.
  5. Now take a pan add butter, chopped spinach saute it well.
  6. Then mix it in lentils cook it for 20 to 25 minutes.
  7. Then beat it with hand, add green chilies and tamarind past mix it well and cover it for 5 minutes.

For Making Baghar:

  1. Take a pan pour oil and butter add mustard seeds, cumin and curry leaves, make baghar.
  2. Then put on lentil then serve.

Ingredients For Haryali Cheelay:

  • Yellow lentils 1 cup
  • White lentil 2 cups
  • Eggs 2-3
  • Green chilies 8-10
  • Mint leaves 1/2 bunch
  • Green coriander 1/2 bunch
  • Boiled spinach  100 gm
  • Garlic paste 1 tsp
  • Cumin powder 1 tbsp
  • Red chili powder 1 tbsp
  • Oil to fry
  • Salt to taste

Method:

  1. First take a chopper add green chilies, chopped green coriander mint and chopped spinach, beat it well.
  2. Now add moong daal and mash daal wash it water and leave it in water.
  3. Now add chopped cumin, chopped red chilies, green chilies, chopped garlic paste, egg and salt blend it well.
  4. Then add spinach paste, make smooth batter.
  5. Now take a pan, pour oil, spread in pan, so that it becomes pan cake.
  6. After that pour oil, cook it on low temperature.
  7. Now change its side, pour oil.
  8. Haryali chapati is ready.

Ingredients For Chicken Karhai Daal Chana:

  • Crushed cumin 1/2 tsp
  • Caroms 1 pinch
  • Fenugreek  1/2 tsp
  • Clarified butter 1/2 cup
  • Salt  to taste
  • Sliced ginger for garnish
