Bhagaray Baigan, Bihari Chicken Boti And Masala Doodh by Shireen Anwer

Ingredients For Bihari Chicken Boti:

  • Chicken 1 (16 pieces)
  • Raw papaya 1 tbsp
  • Ginger garlic 2 tbsp
  • Salt  1 1/2 tbsp
  • Chili powder 1 1/2 tbsp
  • Poppy seeds  1 tbsp
  • Roasted gram grinded 2 tbsp
  • Roasted and crushed cumin 1 tsp
  • Yogurt 1 cup
  • Mixed all spice 1 tsp
  • Brown onion fried  2 tbsp
  • Oil 1/2 cup

Method:

  1. First add chicken pieces add raw papaya, ginger garlic, salt, chopped red chilies, roasted and chopped raisins, roasted and chopped chickpea, roasted and chopped cumin, yogurt, mix garam masala, fried and chopped onions marinate it for 1 hour.
  2. Now take a pan pour oil add marinated chicken cover and let it cook, until it becomes ready.
  3. Give it steam of coal, then garnish it with onion rings, green coriander and green chilies then serve.

Ingredients For Bhagaray Baigan:

  • Fresh round brinjals 1 kg
  • Sesame seeds 2 tbsp
  • Peanuts 2 tbsp
  • Desiccated coconut 2 tbsp
  • Coriander powder 2 tbsp
  • Cumin powder  1 tbsp
  • Garlic paste 1 tbsp
  • Chili powder 2 tbsp
  • Turmeric 1/2 tsp
  • Salt 1 1/2 tsp
  • Tamarind pulp 1/2 cup
  • Oil  1 1/2 cup

For Baghar:

  • Curry leaves 20
  • Button red chilies 8 to 10
  • Mustard seeds 1/2 tsp
  • Fenugreek seeds 1/2 tsp
  • Onion seeds 1/2 tsp
  • White cumin seeds  1 tsp

Method:

  1. First pour oil add curry leaves, red chilies, mustard seeds, fenugreek seeds, kalonji and white cumin fry it well.
  2. Now add sesame seeds, peanuts, chopped coconut, chopped coriander, chopped cumin, garlic paste, chopped red chilies, turmeric and salt fry it well.
  3. Then add round brinjals pour water cover and let it cook, until it becomes ready.
  4. After that add tamarind paste, simmer it for 10 minutes and take it out.

Ingredients For Masala Doodh:

  • Milk 1 kg
  • Sugar 6 tbsp
  • Saffron 1/4 tsp
  • Nutmeg grinded 1/4 tsp
  • Green cardamom grinded 1/2 tsp
  • Almonds and pistachio  2 tbsp

Method:

  1. First pour milk cook it for 15 minutes on low temperature.
  2. Now add sugar, stir it well until it is saturated.
  3. Then add saffron, chopped nutmeg and chopped green cardamom, simmer it for 5 minutes.
  4. After that add chopped almonds, pistachio serve it hot or cold.
