Paneer In Pista Gravy, Sabuth Moong Daal Rice And Homemade Paneer by Chef Gulzar

Ingredients For Homemade Paneer:

  • Milk 2 liter
  • Vinegar  3-4 tbsp

Method:

  1. First take a pan, pour milk and boil it.
  2. When the milk is boiled then remove it from stove.
  3. Now add vinegar mix it and cover.
  4. Add water and cottage mixture, take a muslin cloth filter it well.
  5. Now close the muslin cloth and hang it for 4 to 5 hours, so that water drains.
  6. Now take it out from muslin cloth.
  7. Paneer is ready.

Ingredients For Paneer In Pista Gravy:

  • Cottage cheese 200 gm
  • Yogurt 1 cup
  • Pistachio paste 1/2 cup
  • Onion paste 1/2 cup
  • Green chilies 3-4
  • Coriander 1/2 bunch
  • Ginger garlic paste 1 tbsp
  • Ground coriander  1/2 tsp
  • White pepper 1/2 tsp
  • All spice powder 1/2 tsp
  • Black pepper 1/2 tsp
  • Oil 2-3 tbsp
  • Cream  3-4 tbsp
  • Salt as required

Method:

  1. First fry the cubes of cottage cheese and keep it on a side.
  2. Now take a blender add pistachio paste, green chilies and green coriander blend it well.
  3. Then pour oil add chopped onions and ginger garlic paste for frying.
  4. Now add yogurt, chopped coriander, chopped white pepper, chopped black pepper and salt and chopped garam masala roast it well.
  5. Then add pistachio paste, cook it well.
  6. After that pour water make its gravy thick.
  7. Make cubes of cottage cheese then mix it well.
  8. Then sprinkle cream and garam masala then serve.

Ingredients For Sabuth Moong Dal Rice:

  • Boiled rice 250 gm
  • Boiled moong daal 200 gm
  • Chicken stock 1 cup
  • Coriander 1/2 bunch
  • Green chilies 2-3
  • Whole red chilies 5-6
  • Curry leaves  8-10
  • Red chilies 1 tsp
  • Chopped garlic 1 tbsp
  • Whole cumin 1/2 tsp
  • Black pepper 1/2 tsp
  • Oil as required
  • Salt  as required

Method:

  1. First take a boiled moong daal, wash and boil it hard.
  2. Then take a pan pour oil add whole cumin and whole red chilies make it crispy.
  3. Now add chopped garlic for frying.
  4. After that add whole moong daal, chopped red chilies and chopped black pepper keep its temperature high, then add boiled sela rice, and water, pour water and mix it.
  5. Now add chicken stew, green chilies and green coriander simmer it well.
  6. When the simmer is done then add moong daal, take it out in dish then serve.
