Prawn Fried Rice, Peking Chicken And Chinese Style Chicken Wings by Chef Gulzar

Ingredients For Peking Chicken:

  • Whole chicken 1-1/4 to 1-1/2 kg
  • Oyster sauce 4 tbsp
  • Dark soya sauce 6 tbsp
  • Star anise 4
  • Paprika 1 tsp
  • All spice powder 1/2 tsp
  • Garlic 6-8 cloves
  • Chicken stock  4-5 cups
  • Oil to Fry

Method:

  1. First take a pan, add chicken stew, oyster sauce, soya sauce, garam masala, garlic cloves, paprika and add chicken, cover and let it cook, tender chicken.
  2. Change the sides while frying.
  3. Then add remaining sauce filter it add sauce make it thick, peking sauce is ready.
  4. Take a wide empty pan pour oil add chicken, until chicken is fried well and garnish it.
  5. Now take out the chicken from pan serve it with peking sauce.

Ingredients For Prawn Fried Rice:

  • Rice 1/2 kg
  • Prawns 1/2 kg
  • Garlic (chopped) 2 tbsp
  • Green onion 2-3 sticks
  • Red chili flakes 1 tsp
  • Soya sauce 3-4 tbsp
  • Brown sugar 1 tsp
  • Lemon juice  2 tbsp
  • Green chilies 5-6
  • Chinese salt 1/2 tsp
  • Oil 2-3 tbsp
  • Salt to taste
  • Green onion to garnish
  • Cabbage  as required

Method:

  1. First add sela rice, wash it, now add 2 to 3 hours, leave it in water.
  2. Then boil the rice, filter them and keep it on a side.
  3. Now take a pan, pour oil and chopped garlic, fry it for 1 to 2 minutes.
  4. Now add prawns for frying and take it out and keep it on a side.
  5. Now add green onion, chop the white pieces.
  6. Along cabbage, chopped red chilies, green chilies, salt, soya sauce, chinese, lemon juice and brown sugar mix it.
  7. Now add prawns again.
  8. Then boil it hard add rice mix it well.
  9. When the rice becomes ready then dish out it and add green onions for garnishing then serve.

Ingredients For Chinese Style Chicken Wings:

  • Chicken wings 1/2 kg
  • Ginger garlic 1 tbsp
  • Soya sauce 2 tbsp
  • Corn flour 2-3 tbsp
  • Black pepper 1 tsp
  • Egg white 2-3
  • Chicken tube  1
  • Oil to fry
  • Salt to taste

Method:

  1. Take a mixing bowl add ginger garlic paste, soya sauce, brown sugar, corn flour, chopped black pepper, egg white, chicken cube and salt marinate the chicken wings.
  2. Then heat the oil on low medium temperature add chicken wings, deep fry and dish out then serve.
