Achari Aloo

Ingredients 

  1. Oil half cup 
  2. Whole red chilli 6-7
  3. White cumin seeds 1tsp 
  4. Black seeds ( kalonji) 1tbsp 
  5. Garlic 1tbsp chopped 
  6. Onion chopped 1 
  7. Potato's 1kg 
  8. Turmeric powder half tsp 
  9. Red chilli powder 1tbsp 
  10. Salf 
  11. Water 
  12. Lemon 1tbsp 
  13. Green chilli , green leave & mint .

Method

  • In pen add oil , red chilli whole , cumin seeds.
  • Then cooked it add kalonji & garlic , onion & cooked it almost 2 min in low flame 
  • Add potatoes then add water n remaining spices n cooked till potatoes soften very well 
  • In the end serve it hot &garnished with green leaves & green chilli.

Saboot Masoor Ki Teh Wali Biryani

Ingredients

  1. Rice half kg boiled 
  2. Oil half cup 
  3. Onion fried 1cup 
  4. Cumin , bay leaf , black cardimum, black whole pepper 
  5. Black masoor daal boiled 
  6. Ginger garlic paste 1tbsp 
  7. Tomato half kg slice cutting 
  8. White cumin 1tsp 
  9. Salt 
  10. Red chilli powder 1tbsp 
  11. Turmeric 1tsp 
  12. Green (5-6 )chilli , green leave , mint 1 cup 

Method 

  • Half cup of oil add in a pan add onine & ginger garlic paste cooked it little bit then add tomatoes & all spices &cooked till masala cooked then add daal in this mixture .
  • In second step in second pan add oil then add boiled rice & add daal over thee rice & add green chilli , mint , green leave . 
  • Over rice spread food colour & Cook 15 min .

Baigan ka bharta 

Ingredients

  1. Brinjal ( baigan) 1kg keep brinjal on flame for 10 min & then remove skin 
  2. Oil half cup 
  3. Ginger garlic chooped 1tbsp 
  4. Onion 1chopped 
  5. Tomatoes 4-5 chopped 
  6. Green leave , mint , green chilli 
  7. Red chilli 1tbsp 
  8. Turmeric powder 1tsp 
  9. Cumin powder roasted 1tsp 
  10. Garam masala 1tsp
  11. Coriander powder 1tsp 
  12. Aachor powder 1sp 

method 

  • In pan add oil & ginger garlic 
  • Add onion add all spices and tomato's cooked it for 5 min 
  • Then add bringal & cooked it till oil leave the pen 
  • Then serve it with hot naan.
  • Garnished with green chilli , mint..

Chukandar ka achar 

Ingredients 

  1. Chukandar peal off slices boiled 
  2. Salt
  3. Sugar 2tsp 
  4. Ginger chopped 1tbsp 
  5. Achari rae 2tbsp 
  6. Red chilli powder 1tbsp
  7. Water

Method

  • In a bowl add water then add all apices then add chukandar.
  • Serve it almost 5 days later.
