Rabri Ingredients: Fresh Milk: 2 kg Sugar: 2 tbsp Cardamom powder: 1/2 tsp Nuts: 10 Method: Boil milk. After every boil keep on mixing. When milk thickens add sugar, cardamom powder, nuts and take it out. Rabri is ready.
Tihari Ingredients: Potatoes: 1/2 kg Peas: 1/2 kg Rice: 1/2 kg All spices: 1 tbsp Salt: to taste Garlic: 1 tbsp Turmeric: 1 tsp Red chili powder: 1 tbsp Onions: 2 Green chilies: 5-6 Fenugreek seeds: 1 tsp Yogurt: 1/2 cup Method: Fry onions in hot oil and add Fenugreek seeds. Add garlic, salt, green chilies, turmeric, yogurt and mix well. Add potatoes and peas and when they get half boiled then add water. put green chilies in watery rice, add salt and boil it in high flame and then low flame. Serve with raita.
Shimla Mirch Aur Daal Ingredients: Capsicum: 2 Channay ki daal: 250 gms Onion: 250 gms Red chili powder: 1 tsp Turmeric powder: 1/2 tsp Garlic: 1 tsp Salt: to taste Yogurt: 1/2 cup Method: Heat oil and fry onions. Add garlic, salt, turmeric, red chili powder and yogurt. Now add boiled chanay ki daal, capsicum and cover the lid on low heat. Garnish with fresh coriander leaves and green chilies.
Turai Aur Aloo Ingredients: Turai: 1/2 kg Onion: 1 Potatoes: 1/2 kg Garlic: 1 tsp Tomatoes: 2 Cumin seeds: 1 tsp Salt: to taste Red chili powder: 1 tsp Turmeric: 1/2 tsp Coriander leaves: as required Green chilies: 2 Method: Heat oil, fry onions and cumin seeds. Add potatoes, garlic, Salt, red chili powder, turmeric and mix well. Now cut tomatoes and Turai and add. Cover the lid and leave it on low flame. Sprinkle green chilies, coriander leaves and serve.
