Yakhni Pulao by Chef Samina

Ingredients for Yakhni Pulao:

  • Mutton meat 1-1/2 kg
  • Rice 750 gm
  • Salt to taste
  • Nutmeg mace powder 1 tsp
  • White cumin 1 tbsp
  • Ginger garlic 2 tbsp
  • Fennel 2 tbsp
  • Coriander 2 tbsp
  • All spice powder 2 tbsp
  • Ginger 4 tbsp
  • Kewra essence few drops
  • Ghee 3/4 cup
  • Yogurt 2 cup
  • Small cardamom 10-12
  • Whole red chili 10-12
  • Onion 4
  • Bay leaf 2
  • Ginger 1
  • Garlic 1 potli

Method:

  1. Put onion, ginger, garlic, whole red chili, fennel, coriander, cumin, small cardamom and bay leaf and tender meat.
  2. Now strain yakhni and separate meat.
  3. Fry onion in hot ghee. Then put all spice powder and ginger garlic paste and roast it.
  4. Together add meat. When it is roasted, add nutmeg mace powder, kewra essence and stock and cook until it boil.
  5. In end, add soaked rice and cook first on high flame for 10 minutes.
  6. After that, cook on medium flame and keep on dum.
  7. When ready, serve hot.
