Yakhni Pulao by Chef Samina

Ingredients for Yakhni Pulao:
- Mutton meat 1-1/2 kg
- Rice 750 gm
- Salt to taste
- Nutmeg mace powder 1 tsp
- White cumin 1 tbsp
- Ginger garlic 2 tbsp
- Fennel 2 tbsp
- Coriander 2 tbsp
- All spice powder 2 tbsp
- Ginger 4 tbsp
- Kewra essence few drops
- Ghee 3/4 cup
- Yogurt 2 cup
- Small cardamom 10-12
- Whole red chili 10-12
- Onion 4
- Bay leaf 2
- Ginger 1
- Garlic 1 potli
Method:
- Put onion, ginger, garlic, whole red chili, fennel, coriander, cumin, small cardamom and bay leaf and tender meat.
- Now strain yakhni and separate meat.
- Fry onion in hot ghee. Then put all spice powder and ginger garlic paste and roast it.
- Together add meat. When it is roasted, add nutmeg mace powder, kewra essence and stock and cook until it boil.
- In end, add soaked rice and cook first on high flame for 10 minutes.
- After that, cook on medium flame and keep on dum.
- When ready, serve hot.
