Chicken Rice Soup by Zarnak Sidhwa

Ingredients for Chicken Rice Soup:

  • Boneless chicken 1/2 kg
  • Chopped onion 1/2 cup
  • Salt 1 tsp
  • Dried thyme leaves 1/2 tsp
  • Pepper 1/4 tsp
  • Sliced celery 1 cup
  • Sliced carrots 1 cup
  • White rice 1/2 cup

Method:

  1. Add chicken and water to large pan.
  2. Bring to a boil, occasionally skimming surface.
  3. Reduce heat to low.
  4. Cover pan and simmer for 15 minutes.
  5. Add onion, thyme, salt and pepper.
  6. Cover and simmer for 45 minutes.
  7. Remove chicken and skim fat from chicken broth, bring to a boil.
  8. Stir in celery, carrots and rice.
  9. Reduce heat to low.
  10. Cover and simmer for 20 to 30 minutes.
