Ingredients for Mix Vegetable Biryani:
- Onion 1 cup
- Oil 1 cup
- Carrot 1 cup
- Potato 1 cup
- Capsicum 1 cup
- French beans 1 cup
- Cauliflower 1 cup
- Cabbage 1 cup
- Peas 1 cup
- Tomato 1 cup
- Spring onion 1/2 cup
- Coriander 1/2 bunch
- Mint 1/2 bunch
- Green chili 12-15
- Ginger garlic paste 1 tbsp
- Rice 1 kg
- Whole mix spice as required
- Bay leaf 2
- Cardamom 6
- Cumin seed 1 tsp
- Star anise 3
- Red chili powder 1 tbsp
- Turmeric powder 1/2 tsp
- Salt to taste
- Chicken cubes 2
- Whole spice powder 1 tsp
- Cumin seed roasted 1 tsp
- Nutmeg mace powder 1/2 tsp
- Cardamom powder 1 tsp
- Dry plum 1/2 cup
- Lemon 1/4 cup
- Yellow food color 1/4 tsp
- Kewra water 1 tbsp
- Milk 2-3 tbsp
- Salad for serving
Method:
- Heat 3/4 cup oil in one pan. Then do onion golden brown and take out half onion.
- Put ginger garlic paste in remaining onion. Together add red chili powder, coriander powder, turmeric powder, chicken cubes, salt and chopped tomatoes and saute it.
- Cut all vegetables into cubes, blanch it and put in ready gravy.
- In end, add whole spice powder, cumin seed roasted, cardamom powder, nutmeg mace powder, dry plum, lemon juice, green coriander, mint and green chilies and roast for 2-3 minutes.
- Boil rice with whole mix spice, cumin seed, star anise, bay leaf and clove and leave one boil.
- Make layer of vegetables gravy in one big pot and put rice on top.
- Now add kewra, milk, yellow food color and fried onion, put 1/4 cup oil and simmer on low flame for 5-10 minutes.
- When ready serve with raita.
