Ingredients for Paya Masala:

  • Nutmeg 1
  • Mace 1 tsp
  • Big cardamom powder 1 tbsp
  • Small cardamom 8-10
  • Cinnamon 3-4 sticks
  • Cloves 6-8
  • Whole coriander 6 tbsp
  • Black cumin 4 tbsp
  • White cumin 6 tbsp
  • Kashmiri chili 50 gm
  • Whole red chili 50 gm

Ingredients for Chota Chana Paya:

  • Mutton trotters 12
  • Boiled white chickpeas 500 gm
  • Yogurt 1/2 kg
  • Ginger garlic paste 2 tbsp
  • Paya masala 4 tbsp
  • Onion 2
  • Onion seeds 1 pinch
  • Oil 1 cup
  • Salt as required
  • Whole green chilies for garnish
  • Green coriander for garnish
  • Lemon for garnish
  • Whole ginger for garnish
  • All spice powder for garnish

Ingredients for Meethay Samosay:

For Samosa Strip:

  • White flour 1/2 kg
  • Clarified butter 3 tbsp
  • Oil for fry

For Filling:

  • Khoya 250 gm
  • Raisin 1/2 cup
  • Sugar 1/2 cup
  • Sesame 1/3 cup
  • Poppy seeds 2 tbsp
  • Fresh grated coconut 1 cup
  • Kewra essence few drops
