Glazed Chocolate Chip Cake by Zarnak Sidhwa

Ingredients for Glazed Chocolate Chip Cake:

  • Egg whites 4
  • Cream of tartar 1/4 tsp
  • Divided sugar 1-1/2 cups
  • Flour 2-1/2 cups
  • Baking powder 2 tsp
  • Baking soda 1-1/2 tsp
  • Salt 1 tsp
  • Buttermilk 1-1/2 cups
  • Oil 1/4 cups
  • Vanilla essence 1 tbsp
  • Mint chocolate 1/2 cups

For Chocolate Drizzle:

  • Chocolate chips 1/3 cup
  • Milk 2 tbsp

Method:

  1. Beat egg whites in a large bowl until foamy.
  2. Add cream of tartar, increase speed until soft peaks form.
  3. Gradually add 1/2 sugar, beating until stiff but not dry.
  4. Combine remaining 1 cup sugar, flour, baking powder, baking soda, salt in a another large bowl.
  5. Beat in buttermilk, oil, vanilla and a heaping spoonful of whites with mixer on medium speed.
  6. Fold in remaining whites and chocolate chips with a whisk.
  7. Scrape batter into greased pan, smoothing top.
  8. Bake cake at 180 degrees C until a skewer inserted in the center comes out clean, 40 to 50 minutes.
  9. Let cool in the pan on a wire rack for 10 minutes.
  10. Invert onto rack and let cool completely.
