Ingredients for Nargisi Vegetable Koftay:
- Carrot 1
- Egg white 1
- Potatoes 2
- Green chilies 2
- Boiled eggs 4
- Mint leaves 7-8
- Peas 1/2 cup
- Rice flour 1/2 cup
- Red chili 1 tsp
- White cumin 1 tsp
- All spice powder 1/2 tsp
- Salt to taste
For Gravy:
- Chopped onion 3
- Oil 1/2 cup
- Turmeric 1 tsp
- Ginger garlic paste 1 tbsp
- All spice powder 1/2 tsp
- Red chili 1/2 tbsp
- Coriander powder 1/2 tbsp
- Yogurt 3 tbsp
- Salt to taste
Method:
- First, boil potatoes, peel it and make bhurta.
- Grind carrot and peas finely and mix in potato bhurta.
- Together mix salt, red chili, white cumin, all spice powder, rice flour and egg white nicely and make small small koftay.
- For Salan: Heat oil, do finely chopped onion golden brown, take out and spread on paper.
- Now
put yogurt, ginger garlic paste, red chili, coriander powder, turmeric,
all spice powder, salt and mashed fried onion and roast it lightly.
- Then fry koftay in low oil in separate pan and put in cooked masalay. Together do its flame low.
- When oil comes up, put 1 glass water and cook without cover.
- When it boils, cut green chilies and mint leaves into finely chop and put in it.
- In end, keep on simmer on low flame and serve with hot roti.
