Ingredients for Pineapple Cream Cake:
- Eggs 4
- Flour 4 oz
- Baking powder 1 tsp
- Caster sugar 4 oz
- Vanilla essence or Pineapple essence 1 tsp
For Icing:
- Fresh cream 12 oz
- Icing sugar 2 oz
- Pineapple tit bit 2 cup
- Cherries for decoration
Method:
- For Sponge: Beat eggs and caster sugar nicely until light and fluffy.
- Now put vanilla essence or pineapple essence.
- Now fold in strained flour and baking powder mixture and bake in oven on 180 degrees C for 20 minutes.
- For Icing: Beat cream and add icing sugar.
- For Assemble: Set layer of cake on serving plate and put 2-3 tbsp fruit syrup.
- Now spread beaten cream and pineapple chunks.
- Now cover with second part of cake, put again fruit syrup and moist it.
- Now cover cake with cream and serve with pineapple and cherries.
