Kashmiri Kofta Gravy by Chef Gulzar

Ingredients for Kashmiri Kofta Gravy:

For Kofta:

  • Chicken mince 1 kg
  • Onion 2
  • Eggs 2
  • Bread slice 2-3
  • Crushed garlic 2 tbsp
  • Kashmiri chili paste 2 tbsp
  • Cumin powder 1 tsp
  • Black pepper 1 tsp
  • Baking powder 1/2 tsp
  • Oil for fry
  • Salt to taste

For Gravy:

  • Tomato puree 1 cup
  • Kashmiri chili paste 1/2 cup
  • Yogurt 1 cup
  • Turmeric powder 1 tsp
  • All spice powder 1 tsp
  • Cumin powder 1 tsp
  • Ginger garlic paste 2 tbsp
  • Chopped onion 2
  • Oil 3-4 tbsp
  • Salt to taste

Method:

  1. For Koftay: Put onion in pan and fry for 1 minute on high flame.
  2. Now add all ingredients except oil in blender and make paste.
  3. Now make koftay and fry light.
  4. For Gravy: Put oil in pan and do chopped onion light brown.
  5. Then add ginger garlic paste and fry for 1-2 minutes.
  6. Now beat tomato puree and yogurt and put in it.
  7. After that, add turmeric, all spice powder, cumin powder and paste and roast it nicely.
  8. When mixtures dries and leaves oil, put water as required, put koftay on gravy with soft hands and keep on low flame for 10 to 15 minutes.
  9. When koftay is ready, dish out, garnish with green coriander and serve.
