Chicken Koftas by Zarnak Sidhwa

Ingredients for Chicken Koftas:

  • Chicken mince 1/2 kg
  • Cinnamon powder 1/2 tsp
  • Salt to taste
  • Oil 3 tbsp
  • Onion paste 1 cup
  • Ginger garlic paste 1 tbsp
  • Coriander powder 1 tbsp
  • Red chili powder 1 tsp
  • Tomato puree 1 cup
  • Cashew nut paste 2/3 cup
  • Garam masala 1 tsp
  • Pomegranate syrup 2 tbsp
  • Cream 1 cup

Method:

  1. Mix cinnamon powder, 1 tbsp of salt and minced chicken thoroughly.
  2. Divide the mix into equal portions.
  3. Shape them into balls. Keep the koftas aside.
  4. Heat oil in pan. Add boiled onion paste and cook till onions turn pink.
  5. Add ginger garlic paste. Saute for a minute, then add coriander powder and red chili powder.
  6. Stir in tomato puree and cashew nut paste dissolved in a little water.
  7. Cook for 5 minutes on a high flame, stirring continuously.
  8. Add 1-1/2 cups of water for ten minutes, stirring occasionally.
  9. Add garam masala powder and pomegranate syrup.
  10. Check and adjust seasoning. Simmer for 5 minutes. Stir in cream.
