Ingredients for Butter Scotch Pie:
For Short Crust Pastry:
- Butter 4 oz
- Icing sugar 2 oz
- Egg yolk 1
For Filling:
- Milk 3 cups
- Vanilla essence 1/2 tsp
- Butter 2 oz
- Vanilla custard powder 3 tbsp
- Sugar 2/3 cup
- Eggs 4
- Water 1/2 cup
- Lemon juice 1 tbsp
For Meringue:
- Eggs 4
- Cream of tartar pinch
- Salt 1/4 tsp
- Sugar 4 tbsp
Method:
- For Crust: Mix butter, icing sugar and egg yolk for dough.
- For Making Dough: Use chill water.
- Now press on pie plate and knead it nicely.
- After that bake for 10 minutes on 180 degrees C, take out and keep it aside.
- For Filling: Caramelize sugar and water until light golden.
- Now add 2 cups hot milk and cook on low flame.
- Then put egg yolks, vanilla custard powder and caramelize milk in remaining milk and cook until thick.
- Now add butter and vanilla essence and put in one dish.
- After that, beat with egg whites, salt and cream of tartar until it becomes stuff.
- Now put sugar and bake for 20 minutes until light golden.
