Ingredients for Butter Scotch Pie:

For Short Crust Pastry:

  • Butter 4 oz
  • Icing sugar 2 oz
  • Egg yolk 1

For Filling:

  • Milk 3 cups
  • Vanilla essence 1/2 tsp
  • Butter 2 oz
  • Vanilla custard powder 3 tbsp
  • Sugar 2/3  cup
  • Eggs 4
  • Water 1/2 cup
  • Lemon juice 1 tbsp

For Meringue:

  • Eggs 4
  • Cream of tartar pinch
  • Salt 1/4 tsp
  • Sugar 4 tbsp

Method:

  1. For Crust: Mix butter, icing sugar and egg yolk for dough.
  2. For Making Dough: Use chill water.
  3. Now press on pie plate and knead it nicely.
  4. After that bake for 10 minutes on 180 degrees C, take out and keep it aside.
  5. For Filling: Caramelize sugar and water until light golden.
  6. Now add 2 cups hot milk and cook on low flame.
  7. Then put egg yolks, vanilla custard powder and caramelize milk in remaining milk and cook until thick.
  8. Now add butter and vanilla essence and put in one dish.
  9. After that, beat with egg whites, salt and cream of tartar until it becomes stuff.
  10. Now put sugar and bake for 20 minutes until light golden.
