Chicken Do Piyaza by Chef Gulzar

Ingredients:

  • Chicken 1 kg
  • Sliced onion 4
  • Yogurt 1/2 kg
  • Bay leaves 2-3
  • Whole red chili 8-10
  • Green chilies 6-8
  • Ginger garlic 2 tbsp
  • All spice powder 1 tbsp
  • Big cardamom 3-4
  • Cinnamon 3-4
  • Black pepper 1 tsp
  • Clarified butter 1 cup
  • Salt to taste

Method:

  1. First, put ghee in pot, add big cardamom, whole red chili, black pepper and cinnamon and roast it.
  2. Now add chicken and roast it.
  3. Then put ginger garlic paste and roast for 2-3 minutes.
  4. Now beat yogurt and roast more for 2-3 minutes.
  5. Now add water as required and leave until chicken tender.
  6. When chicken is nearly tender, put onion slice, all spice powder, chopped green chilies and salt, mix it nicely and cook until salan leaves its oil.
  7. Now dish out.
  8. Chicken do piyaza is ready.
