Chicken Nihari by Chef Samina

Ingredients:

  • Chicken 1
  • Ghee 3/4 cup
  • Ginger garlic paste 2 tbsp
  • Salt to taste
  • Degi red chili 1 tbsp
  • Turmeric 1/2 tsp
  • Flour 2 tbsp
  • Fennel powder 1-1/2 tsp
  • All spice powder 1/2 tsp
  • Onion 1
  • Dry ginger 1/4 tsp
  • White cumin 1 tsp
  • Chicken stock 3 cup
  • Nali pulp 1/2 cup
  • Green chili, Green coriander for garnish
  • Ginger, Lemon for garnish
  • White naan for serving

Method:

  1. Fry onion in hot oil. Then add chicken and roast it.
  2. Together put ginger garlic paste, salt, chili, turmeric, fennel, dry ginger and cumin and roast it.
  3. Then add chicken stock and boil it. Remove ghee on top and keep it separate.
  4. Now dissolve some flour in water, put in it and cook for approx 1 to 1-1/2 hours.
  5. When chicken is tender, put all spice powder, finely chopped green chilies and remover ghee.
  6. Garnish with haray masalay and nali pulp.
  7. Serve with hot hot naan.
