Ingredients for Chicken Chili Tacos:
- Chicken breast 1
- Onion chopped 1
- Bell pepper 1
- Butter 2 tbsp
- Cayenne powder 21/4 tsp
- Salt 1 tsp
- Sugar 1 tsp
- Black pepper ½ tsp
- Red chili powder 2 tbsp
- Dried oregano ½ tsp
- Cumin powder ½ tsp
- Tomato paste 1 can
- Tomato ketchup ½ cup
- Tortilla bread half cooked
- Cabbage, Jalapenos for sprinkle
Method:
- Heat 2 tbsp oil or butter, saute chopped onion and chopped bell pepper and set aside.
- Add chicken in a large saucepan and cook for 3-5 minutes or until golden brown without adding oil.
- Add sauted onion, bell pepper, tomato paste, tomato ketchup.
- Season with salt, sugar, black pepper, red chili powder, then add dried oregano, cumin powder and cayenne powder.
- Let it cook on low heat and simmer for 20-25 minutes.
- Take half-cooked tortilla bread, place on the taco shells and bake for 1-1.5 minutes or until crisp.
- Pour some chili chicken on it after removing from the oven.
- Sprinkle chopped cabbage and jalapenos and serve with dollop of sour cream.
