Ingredients for Almond Biscuits:
- Flour 1 cup & 2 tbsp
- Eggs 1-1/2
- Butter 1/4 cup
- Vanilla essence 1/4 tsp
- Lemon zest 1 tbsp
- Chopped almonds 1/2 cup
- Almonds 1/2 oz
- Icing sugar 1-3/4 cups
Method:
- Combine the flour, eggs, butter, sugar, vanilla essence, lemon zest and chopped almonds to form smooth dough.
- Stir in the whole almonds.
- Divide a dough into 3 equal parts and roll each portion out into cylindrical log shape.
- Wrap dough into plastic wrap, refrigerate for at least 30 minutes.
- Preheat oven to 175 degrees C,
- Place
refrigerated rolls for dough onto a greased baking sheet and bake for
15-20 minutes. Let cool then slice into 1/2 inch thick slices.
- Put cookies onto greased baking sheet and bake for another 15-20 minutes or until golden brown.
- The cookies are very crisp when done.
