Almond Biscuits by Zarnak Sidhwa

Ingredients for Almond Biscuits:

  • Flour 1 cup & 2 tbsp
  • Eggs 1-1/2
  • Butter 1/4 cup
  • Vanilla essence 1/4 tsp
  • Lemon zest 1 tbsp
  • Chopped almonds 1/2 cup
  • Almonds 1/2 oz
  • Icing sugar 1-3/4 cups

Method:

  1. Combine the flour, eggs, butter, sugar, vanilla essence, lemon zest and chopped almonds to form smooth dough.
  2. Stir in the whole almonds.
  3. Divide a dough into 3 equal parts and roll each portion out into cylindrical log shape.
  4. Wrap dough into plastic wrap, refrigerate for at least 30 minutes.
  5. Preheat oven to 175 degrees C,
  6. Place refrigerated rolls for dough onto a greased baking sheet and bake for 15-20 minutes. Let cool then slice into 1/2 inch thick slices.
  7. Put cookies onto greased baking sheet and bake for another 15-20 minutes or until golden brown.
  8. The cookies are very crisp when done.
