Spicy Fried Chicken by Zarnak Sidhwa

Ingredients for Spicy Fried Chicken:

  • Milk 2 cups
  • Lemon juice 1 lemon
  • Dijon mustard 1 tbsp
  • Salt 1 tsp
  • Dry mustard 1 tsp
  • Crushed red chili 1 tsp
  • Crushed black pepper 1 tsp

For Fried Chicken:

  • Chicken drumsticks 1 kg
  • Flour 2 cups
  • Baking powder 1 tbsp
  • Garlic 1 tbsp
  • Salt 1/2 tsp
  • Oil deep fry

Method:

  1. Mix lemon juice with milk and stand aside to form buttermilk.
  2. Combine the buttermilk, mustard, salt, dry mustard, crushed red chilies and black pepper.
  3. Add the chicken pieces and turn to coat.
  4. Cover the refrigerate for at least 2 hours or over night.
  5. Whisk together flour, baking powder, dry garlic and salt.
  6. Add chicken pieces and turn to coat thickly.
  7. Let the chicken stand 10 minutes turning occasionally to re-coat with flour.
  8. Shake off excess flour before frying in hot oil.
