Chicken Tikka Biryani by Chef Gulzar

Ingredients:
- Chicken leg pieces 4
- Ginger garlic paste 2 tbsp
- Crushed black pepper 1 tsp
- Red chili powder 2 tbsp
- All spice powder 1 tsp
- Lemon juice 3-4 tbsp
- Food color 1 pinch
- Oil as required
- Salt to taste
For Biryani:
- Rice 1/2 kg
- Tomato 4-5
- Brown onion 2
- Ginger garlic paste 2 tbsp
- Green coriander 1/2 bunch
- Mint 1/2 bunch
- Green chilies 4-5
- Dry plum 1/2 cup
- Whole black cumin 1/2 tsp
- Cinnamon 2-3 sticks
- Big cardamom 2-3
- Cloves 3-4
- Red chili powder 1 tbsp
- All spice powder 1/2 cup
- Salt to taste
Method:
- For Making Tikka: Mark cut on chicken leg pieces with knife.
- In a mixing bowl, add lemon juice, red chili powder, all spice
powder, crushed black pepper, food color and salt and mix it nicely.
- Then put chicken leg pieces and marinate with all masalay nicely.
- Then steam it for 15-20 minutes on steamer.
- After few minutes, turn leg pieces.
- Now put both leg pieces in oven tray. Brush with oil or ghee.
- Bake in preheated oven for 5-7 minutes. Chicken tikky is ready.
- For Making Rice: soak rice for approx 2 hours.
- Then in a pot, put water, whole black cumin and salt, mix it and boil it.
- Now add rice and boil 1/3. Then drain its water. Rice is ready.
- For Making Korma: In a pot, put ghee and put big cardamom, cinnamon and clove and roast it.
- Then add tomato, whole green chilies, dry plum, ginger garlic paste, all spice powder and red chili powder and mix it nicely.
- Then put brown onion, mix it nicely and cook until it becomes paste. Korma is ready.
- For Mixing: Put portion of korma oil in a pot. Then put half rice.
- Now put green coriander, green chilies and some brown onion.
- Then put remaining korma. Then put remaining rice and put green coriander, green chilies and some onion.
- In a bowl, put water, put food color, mix it nicely and put on sides of rice.
- Now keep leg pieces on sides of rice and cook on high flame for 5-7 minutes.
- In end, keep on simmer on low flame. Take out in serving dish and serve.
