Punjabi Pulao Biryani by Chef Samina

Ingredients:

  • Chicken 1 kg
  • Onion 1/2 cup
  • Yogurt 250 gm
  • Rice 750 gm
  • Green chilies 20-25
  • Aloo bukhara 8-10
  • Onion 2
  • Salt to taste
  • Ginger garlic paste 2 tbsp
  • Fennel seed 2 tbsp
  • White cumin 1/2 tbsp
  • Kewra water 1 tbsp
  • Ginger 2 tbsp
  • Nutmeg mace powder 1 tsp
  • Whole coriander 1 tbsp
  • Whole mix spice 2 tbsp
  • Red chili powder to taste
  • Oil as required

Method:

  1. Make potli of fennel, cumin and coriander.
  2. Now put salt, chilies, ginger, whole mix spice, green chili, chopped onion and water in chicken and make yakhni.
  3. Fry onion in hot oil. Then add ginger garlic, salt and yogurt and roast masala.
  4. Together put green chili and aloo bukhara.
  5. Now take out chicken from stock and roast it. Add nutmeg mace powder. strain yakhni and put in it.
  6. When it boils, add rice, cook it and put kewra water before simmering.
  7. Add yellow color if you want.
  8. When ready, serve with raita.
