Lemon Curd Crunchy Parfaits by Zarnak Sidhwa

Ingredients:

• Lemon curd 4 tbsp
• Meringue crushed 8-10
• Cream 2 cups
• Vanilla ice cream to decorate
• Slice of lemon to decorate
• Whipped cream as needed
  

Method:

1. Layer in a parfait glass the vanilla ice cream, crushed meringues, cream and lemon curd till all ingredients are used up, decorate with a slice of lemon and some extra whipped cream and serve chilled.
