Chicken Stronganoff by Zarnak Sidhwa

Ingredients:

  • Boneless chicken 4
  • Olive oil 3 tbsp
  • Sliced onion 1 large
  • Mushrooms 1 cup
  • Cream 1-1/2 cups
  • Lemon juice as needed
  • Salt a pinch
  • Black pepper a pinch
  • Fresh parsley 1 tbsp

Method:

  1. Add lemon juice to cream and let stand to make sour cream.
  2. Place chicken breasts, one a time, between two sheets of plastic wrap and flatten each to a thickness of 1/4 inch with a rolling pan.
  3. Cut into 1 inch strips diagonally across the fillets.
  4. In a large frying pan, heat 2 tablespoons of oil & cook sliced onion slowly until soft but not colored.
  5. Add mushrooms and cook until golden brown, then remove and keep warm.
  6. Increase heat and add remaining oil.
  7. Fry chicken very quickly, in small batches for 3-4 minutes until lightly colored.
  8. Remove & keep warm while frying remaining chicken.
  9. Return all chicken, onion & mushroom to frying pan & season with salt & pepper, then stir in sour cream & bring to boil.
  10. Sprinkle with fresh parsley and serve immediately.
