Chicken Stronganoff by Zarnak Sidhwa

Ingredients:
- Boneless chicken 4
- Olive oil 3 tbsp
- Sliced onion 1 large
- Mushrooms 1 cup
- Cream 1-1/2 cups
- Lemon juice as needed
- Salt a pinch
- Black pepper a pinch
- Fresh parsley 1 tbsp
Method:
- Add lemon juice to cream and let stand to make sour cream.
- Place chicken breasts, one a time, between two sheets of plastic wrap and flatten each to a thickness of 1/4 inch with a rolling pan.
- Cut into 1 inch strips diagonally across the fillets.
- In a large frying pan, heat 2 tablespoons of oil & cook sliced onion slowly until soft but not colored.
- Add mushrooms and cook until golden brown, then remove and keep warm.
- Increase heat and add remaining oil.
- Fry chicken very quickly, in small batches for 3-4 minutes until lightly colored.
- Remove & keep warm while frying remaining chicken.
- Return all chicken, onion & mushroom to frying pan & season with salt & pepper, then stir in sour cream & bring to boil.
- Sprinkle with fresh parsley and serve immediately.
