Strawberry Mousse by Zarnak Sidhwa

Ingredients:

  • Strawberries 1 cup
  • Sugar 1/2 cup
  • Water 5 tbsp
  • Unflavored gelatin 1 tsp
  • Salt a pinch
  • Egg whites 2
  • Vanilla or strawberry essence 1/4 tsp
  • Cream 1/2 cup

Method:

  1. Combine chopped strawberries and 1 tbsp sugar and process until smooth.
  2. Pour 2 tbsp water in a bowl and sprinkle with gelatin.
  3. Let stand for 5 minutes.
  4. Place 6 tbsp sugar, the remaining 3 tbsp water and a pinch of salt in a saucepan bring to a boil, stirring just until sugar dissolves.
  5. Cook, without stirring, until a candy thermometer registers 240 degrees C (about 4 minutes).
  6. Add egg whites to gelatin mixture; beat with a mixture at high speed until foamy.
  7. Gradually add remaining 1 tbsp sugar, beating at high speed until soft peaks form.
  8. Gradually pour, hot sugar syrup into egg white mixture, beating first at medium speed and then at high speed until stiff peaks form.
  9. Beat in vanilla. Place cream in a large bowl; beat with a mixture at high speed until stiff peaks form.
  10. Gently fold one-fourth of egg white mixture.
  11. Fold in the remaining egg white mixture.
  12. Fold in strawberry mixture.
  13. Spoon about 1/2 cup mousse into each of the dessert glasses, chill 2 hours or until set.
