Afghani Pulao by Chef Gulzar

Ingredients:
- Rice 300 gm
- Mutton 500 gm
- Onion 1
- Grated carrot 1
- Chopped garlic 2-3
- Cloves 2-3
- Cinnamon 2 sticks
- Yogurt 1/2 cup
- Raisins 1/2 cup
- Whole cumin 1 tsp
- Black pepper 1 tsp
- Sugar 1 tbsp
- Crushed cardamom 1/2 tsp
- Oil 2-3 tbsp
- Salt to taste
Method:
- Wash rice, clean it and soak for 1-2 hours.
- Now in a pan, heat oil, put cinnamon and clove and roast it.
- Then add onion and mutton and roast it nicely.
- After that, put yogurt, black pepper, crushed cardamom, salt and whole cumin.
- When mixture dries and leave oil, add 1-1/2 jug water and cook it.
- When meat is tendered and stock is ready, then put rice and simmer it when it is ready.
- Now put grated carrot, raisins, sugar and water as required in a pan and cook for 3-5 minutes.
- In end, put mixture on rice and serve.
- Afghani pulao is ready.
