Afghani Pulao by Chef Gulzar

Ingredients:

  • Rice 300 gm
  • Mutton 500 gm
  • Onion 1
  • Grated carrot 1
  • Chopped garlic 2-3
  • Cloves 2-3
  • Cinnamon 2 sticks
  • Yogurt 1/2 cup
  • Raisins 1/2 cup
  • Whole cumin 1 tsp
  • Black pepper 1 tsp
  • Sugar 1 tbsp
  • Crushed cardamom 1/2 tsp
  • Oil 2-3 tbsp
  • Salt to taste

Method:

  1. Wash rice, clean it and soak for 1-2 hours.
  2. Now in a pan, heat oil, put cinnamon and clove and roast it.
  3. Then add onion and mutton and roast it nicely.
  4. After that, put yogurt, black pepper, crushed cardamom, salt and whole cumin.
  5. When mixture dries and leave oil, add 1-1/2 jug water and cook it.
  6. When meat is tendered and stock is ready, then put rice and simmer it when it is ready.
  7. Now put grated carrot, raisins, sugar and water as required in a pan and cook for 3-5 minutes.
  8. In end, put mixture on rice and serve.
  9. Afghani pulao is ready.
