Gobi Shaljum Masala by Chef Gulzar

Ingredients:

  • Whole cauliflower 1 kg
  • Green chilies 3-4
  • Red chili powder 2 tbsp
  • Chopped ginger 2 tbsp
  • Garam masala 1/2 tsp
  • Lemon juice 3-4 tbsp
  • Green coriander 1/2 bunch
  • Salt to taste

For Masala Paste:

  • Grated turnips 1/2 kg
  • Chopped tomato 2
  • Chopped ginger 1 tbsp
  • Crushed coriander 1 tsp
  • Crushed cumin 1/2 tsp
  • Cloves 4-5
  • Black pepper 5-6
  • Green cardamom 2-3
  • Cinnamon 2-3
  • Yogurt 2-3 tbsp
  • Olive oil 3-4 tbsp
  • Salt to taste

Method:

  1. Separate cauliflower flower carefully.
  2. Now add chopped green chilies, red chili powder, salt, chopped ginger, green coriander, garam masala and lemon juice and make paste.
  3. Now marinate cauliflower with masala, put in steamer and steam it for 5-10 minutes.
  4. For making masala paste: In a pan, put olive oil, add clove, cinnamon, green coriander and black pepper and roast it.
  5. Now put chopped ginger and fry it. Then add grated turnips and fry it.
  6. Now add crushed coriander, crushed cumin, chopped tomato and salt and roast it nicely.
  7. Then add yogurt, mix it nicely, roast it and make like paste.
  8. When paste is ready, remove it.
  9. Now keep steamed cauliflower in oven proof dish, put all paste on top and paste on cauliflower nicely.
  10. Now bake in preheated oven on 200 degrees C for 15 minutes.
  11. Dish out it and serve.
