Mousse Trifle by Zarnak Sidhwa

Ingredients:

  • Plain chocolate cake or brownies 4-5 slices
  • Cream 1 cup
  • Cherries 1 cup
  • Cherry juice 1 tin
  • Grated chocolate to decorate

For Chocolate Mousse:

  • Separated eggs 4
  • Cocoa powder 1/2 cup
  • Caster sugar 1/2 cup
  • Cream 250 gm
  • Vanilla essence 1 tsp
  • Milk 1/4 cup
  • Gelatin 1 tbsp

Method:

  1. To make the chocolate mousse: Dissolve  gelatin in milk on low heat and set aside.
  2. Whip the yolks and set aside. Mix cocoa, sugar and cream on low heat.
  3. Mix in the yolks and whip well.
  4. Cool the custard and add the gelatin and the vanilla essence.
  5. Beat only 2 eggs whites till stiff and fold in gently, mix all well.
  6. To assemble: Layer the cake in a glass or trifle bowl and soak with some cherry juice or any fruit juice.
  7. Spread the mousse on top and then let set.
  8. Once set add the cream and top with grated chocolate and more cherries and serve chilled.
