Szechuan Sauce by Chef Gulzar

Ingredients:
- Kashmiri chili paste 1/2 cup
- Soya sauce 1/2 cup
- Tomato paste 1/2 cup
- Vinegar 4 tbsp
- Chopped garlic 10 cloves
- Oyster sauce 4 tbsp
- Chicken stock 1 cup
- Sesame oil 1 tbsp
- Chinese salt 1 tsp
- Oil 4 tbsp
Method:
- First heat oil and fry chopped garlic.
- Then put Kashmiri chili paste, tomato paste, soya sauce and oyster sauce and roast for 1-2 minutes.
- Now add sesame oil, stock and vinegar and cook it.
- Then put in grinder and make paste.
- After that put again in pan, roast for 1 minutes and make thick paste.
- Szechuan sauce is ready.
