Szechuan Sauce by Chef Gulzar

Ingredients:

  • Kashmiri chili paste 1/2 cup
  • Soya sauce 1/2 cup
  • Tomato paste 1/2 cup
  • Vinegar 4 tbsp
  • Chopped garlic 10 cloves
  • Oyster sauce 4 tbsp
  • Chicken stock 1 cup
  • Sesame oil 1 tbsp
  • Chinese salt 1 tsp
  • Oil 4 tbsp

Method:

  1. First heat oil and fry chopped garlic.
  2. Then put Kashmiri chili paste, tomato paste, soya sauce and oyster sauce and roast for 1-2 minutes.
  3. Now add sesame oil, stock and vinegar and cook it.
  4. Then put in grinder and make paste.
  5. After that put again in pan, roast for 1 minutes and make thick paste.
  6. Szechuan sauce is ready.
