Bourbon Biscuits by Zarnak Sidhwa

Ingredients:
- Flour 1 cup
- Unsalted butter 1/4 cup
- Sugar 1/3 cup
- Baking soda 1/4 tsp
- Baking powder 1 tsp
- Cocoa powder 1 tbsp
- Vanilla essence 1/2 tsp
- Golden syrup or honey 1 tsp
- Milk 2-3 tbsp
- Sugar for sprinkling
For Filling:
- Butter 1/4 cup
- Icing sugar 1/3 cup
- Cocoa powder 1 tsp
- Vanilla essence few drops
Method:
- Sieve together flour, baking soda, baking powder and cocoa. Keep aside.
- In a bowl, cream together butter and caster sugar until well blended.
- Add vanilla essence and golden syrup and combine.
- Mix in the sieved ingredients with butter mixture and combine to form soft dough.
- Add little milk to form the dough. Roll the dough out.
- Use a knife to cut into rectangular shape pieces.
- Use a toothpick to pick over the rolled out rectangle.
- Sprinkle sugar on top of each rectangle.
- Place dough on the tray and bake in a preheated oven at 155 degrees C for 14-15 minutes or still the edges are done.
- Once bakes, the biscuit will be soft but once cooled it will harden.
- Cool well before proceeding with the filling.
- Mix all the ingredients for filling and using a spatula spread some filling on each biscuit and sandwich using another biscuit.
