Bourbon Biscuits by Zarnak Sidhwa

Ingredients:

  • Flour 1 cup
  • Unsalted butter 1/4 cup
  • Sugar 1/3 cup
  • Baking soda 1/4 tsp
  • Baking powder 1 tsp
  • Cocoa powder 1 tbsp
  • Vanilla essence 1/2 tsp
  • Golden syrup or honey 1 tsp
  • Milk 2-3 tbsp
  • Sugar for sprinkling

For Filling:

  • Butter 1/4 cup
  • Icing sugar 1/3 cup
  • Cocoa powder 1 tsp
  • Vanilla essence few drops

Method:

  1. Sieve together flour, baking soda, baking powder and cocoa. Keep aside.
  2. In a bowl, cream together butter and caster sugar until well blended.
  3. Add vanilla essence and golden syrup and combine.
  4. Mix in the sieved ingredients with butter mixture and combine to form soft dough.
  5. Add little milk to form the dough. Roll the dough out.
  6. Use a knife to cut into rectangular shape pieces.
  7. Use a toothpick to pick over the rolled out rectangle.
  8. Sprinkle sugar on top of each rectangle.
  9. Place dough on the tray and bake in a preheated oven at 155 degrees C for 14-15 minutes or still the edges are done.
  10. Once bakes, the biscuit will be soft but once cooled it will harden.
  11. Cool well before proceeding with the filling.
  12. Mix all the ingredients for filling and using a spatula spread some filling on each biscuit and sandwich using another biscuit.
