Chicken Chettinad by Zarnak Sidhwa

Ingredients:

  • Chicken 500 gm
  • Oil 2 tbsp
  • Chopped onions 2
  • Chopped tomatoes 2
  • Cinnamon sticks 2
  • Cloves 2-4
  • Cardamoms 2
  • Cumin 1 tsp
  • Curry leaves 10-15
  • Turmeric powder 1 tsp
  • Salt to taste
  • Chopped coriander a handful

For Making Paste:

  • Onion 1
  • Ginger 1 tbsp
  • Garlic 1 tbsp
  • Fennel seeds 1 tsp
  • Cumin seeds 1 tsp
  • Peppercorns 1 tbsp
  • Red chilies 3-4
  • Coconut 100 gm

Method:

  1. Grind the ingredients for the paste.
  2. Marinate the chicken with the paste.
  3. Chop the tomatoes, coriander leaves and the onions.
  4. Heat oil and add the cinnamon, cardamom, cloves and cumin.
  5. Saute. Add the chopped onions and the curry leaves.
  6. Saute until the onions are golden.
  7. Add the tomatoes and saute for 5 minutes.
  8. Add the marinated chicken and turmeric powder.
  9. Saute for 10 minutes, sprinkling water at intervals.
  10. Add enough salt, cover with a lid and cook until done.
  11. Add more chili or pepper if required.
  12. Served garnished with coriander leaves.
