Ingredients:

  • Pumpkin 250 gm
  • Red chilies 4
  • Fenugreek seeds few
  • Oil 1/2 cup
  • Fennel seeds 1 tsp
  • Jaggery 1 tsp
  • Onion seeds 1/2 tsp
  • Tamarind paste 2 tbsp
  • Salt to taste

Method:

  1. Heat oil in a pot and fry fenugreek seeds.
  2. When fragrance comes, then add sweet pumpkin.
  3. Together put salt, jaggery, tamarind paste, onion seeds, red chilies and fennel seeds and cook on low flame.
  4. When pumpkin is tendered, then roast it lightly.
  5. Meehtay kadu ki sabzi is ready.
