Classic Biryani by Chef Samina

Ingredients:

  • Mutton 1-1/2 kg
  • Sela rice 1 kg
  • Ghee 250 gm
  • Garlic 1 potli
  • Water 1 cup
  • Yogurt 1-1/2 gm
  • Whole mix spice 3 tbsp
  • Bay leaf 3-4
  • Salt to taste
  • Kewra 1 tsp
  • Nutmeg powder 1-1/2 tbsp
  • Saffron 1 tbsp
  • Yellow food color 1 tsp
  • Chopped ginger 2 tbsp

Method:

  1. Put mutton, salt and 1 cup water in pan and cook it. Then add half quantity of whole mix spice.
  2. Fry garlic in separate pan.
  3. Now cook mutton until water dries.
  4. Then put fry garlic, cook little and put 2 cup water.
  5. Soak rice for 15-20 minutes in one bowl. Then put salt and whole mix spice and boil it.
  6. Put chopped ginger and yellow color in yogurt, mix it and spread on chicken.
  7. In end, mix boiled rice in mutton and keep on simmer.
  8. When ready, serve hot.
