Ingredients:

  • Butter softened 180 gm or 7 oz
  • Grated lemon rind 1 tsp
  • Caster sugar 2/3 cups
  • Eggs 3
  • Flour 3/4 cup
  • Self raising flour 3/4 cup
  • Sliced almonds 1/2 cup

Method:

  1. First grease 8 inch round pan, put butter paper and also grease it.
  2. Now mix butter, grated lemon grind and caster sugar and beat until fluffy.
  3. Then add eggs one by one and beat until it mix.
  4. Now fold in strained flour.
  5. Then put mixture in pan and bake on 180 degrees C for 20 minutes.
  6. Now take it out, sprinkle sliced almonds and bake for 30 minutes.
  7. Then, before turning cake to wire rack, chill for 5 minutes.
