Mocha Walnut Torte Cake by Zarnak Sidhwa

Ingredients:
- Chocolate 5 oz
- Light corn syrup 1/2 cup
- Butter 1/2 cup
- Coffee powder 2 tbsp
- Caster sugar 3/4 cup
- Eggs 3
- Vanilla essence 1 tsp
- Flour 1 cup
- Chopped walnuts 1 cup
For Glaze:
- Chocolate 3 oz
- Butter 1 tbsp
- Light corn syrup 2 tbsp
- Coffee powder 1 tsp
- Halved walnuts to decorate
Method:
- Place 5 oz chocolate, 1/2 cup corn syrup, 1/2 cup butter, 2 tbsp coffee powder in a bowl and heat until butter is melted.
- Stir until chocolate is completely melted.
- Add sugar and mix well.
- Blend in eggs and vanilla.
- Stir in flour and walnuts.
- Spread into greased cake pan.
- Bake mocha walnut torte cake until tooth pick inserted in center comes out clean.
- Do not over bake.
- Cool mocha torte cake for 10 minutes, remove from pan.
- Gently invert cake onto wire rack, cool completely.
- Place remaining 3 oz chocolate and 1 tbsp butter in a pan and melt.
- Add 2 tbsp corn syrup and 1 tsp coffee powder, stir until well blended.
- Spread glaze evenly over top and side of mocha walnut torte cake.
- Let stand 1 hour or until glaze is set.
