Mocha Walnut Torte Cake by Zarnak Sidhwa

Ingredients:

  • Chocolate 5 oz
  • Light corn syrup 1/2 cup
  • Butter 1/2 cup
  • Coffee powder 2 tbsp
  • Caster sugar 3/4 cup
  • Eggs 3
  • Vanilla essence 1 tsp
  • Flour 1 cup
  • Chopped walnuts 1 cup

For Glaze:

  • Chocolate 3 oz
  • Butter 1 tbsp
  • Light corn syrup 2 tbsp
  • Coffee powder 1 tsp
  • Halved walnuts to decorate

Method:

  1. Place 5 oz chocolate, 1/2 cup corn syrup, 1/2 cup butter, 2 tbsp coffee powder in a bowl and heat until butter is melted.
  2. Stir until chocolate is completely melted.
  3. Add sugar and mix well.
  4. Blend in eggs and vanilla.
  5. Stir in flour and walnuts.
  6. Spread into greased cake pan.
  7. Bake mocha walnut torte cake until tooth pick inserted in center comes out clean.
  8. Do not over bake.
  9. Cool mocha torte cake for 10 minutes, remove from pan.
  10. Gently invert cake onto wire rack, cool completely.
  11. Place remaining 3 oz chocolate and 1 tbsp butter in a pan and melt.
  12. Add 2 tbsp corn syrup and 1 tsp coffee powder, stir until well blended.
  13. Spread glaze evenly over top and side of mocha walnut torte cake.
  14. Let stand 1 hour or until glaze is set.
