Palak Chicken by Zarnak Sidhwa

Ingredients:

  • Spinach 2 bunches
  • Chicken 1 kg
  • Oil 6 tbsp
  • Black peppercorns 8
  • Bay leaves 2
  • Cloves 8
  • Green cardamom 5
  • Chopped onion 2
  • Chopped garlic 8 cloves
  • Chopped ginger 1 inch
  • Cumin powder 2 tsp
  • Coriander powder 1 tsp
  • Red chili powder 3/4 tsp
  • Salt to taste
  • Yogurt 5 tbsp
  • Garam masala 1/4 tsp

Method:

  1. Wash and finely shred spinach, chop onion, ginger and garlic and keep aside.
  2. Heat oil, add peppercorn, bay leaves, cloves, cardamoms and saute for a minute.
  3. Add finely chopped onions, ginger, garlic and saute till onions turn light brown.
  4. Add chicken pieces, cumin powder coriander powder, red chili powder and a little salt.
  5. Stir fry for a minutes, add one tbsp of yogurt.
  6. Stir fry a minute, add one more tbsp of yogurt.
  7. Repeat this till all of the yogurt has been used up and the chicken turns light brown.
  8. Add spinach and a little more salt to taste.
  9. Mix well and stir fry till the spinach gets well mashed.
  10. Cover and cook till the chicken is tender.
  11. Lastly add garam masala and cook till the gravy is thick.
