Chicken Lasagna by Zarnak Sidhwa

Ingredients:

For Chicken Filling:

  • Boneless chicken 1/2 kg
  • Oil 3 tbsp
  • Chopped onion 2 tbsp
  • Garlic paste 1 tsp
  • Salt 1 tsp
  • Black pepper 1 tsp
  • Mushrooms 6
  • Oregano 1 tsp
  • Flour 1 tbsp
  • Cream 4 tbsp

For Cheese Sauce:

  • Butter 3 tbsp
  • Flour 2 tbsp
  • Salt 1/2 tsp
  • White pepper 1/2 tsp
  • Milk 1-1/2 cups
  • Water 1/2 cup
  • Cheddar cheese 1/2 cup

For Tomato Sauce:

  • Oil 1 tbsp
  • Chopped onion 1 tbsp
  • Garlic paste 1/2 tsp
  • Tomato paste 4 tbsp
  • Salt 1/2 tsp
  • Red chilies 1 tsp
  • Oregano 1 tsp
  • Sugar 1 tbsp
  • Water 1/2 cup

For Lasagna:

  • Lasagna sheets 6
  • Capsicum 1
  • Cheddar cheese 1 cup

Method:

  1. For chicken filling: Heat oil in a wok and fry onion till light brown.
  2. Add garlic paste and saute it for a while.
  3. Now add chicken pieces and fry it.
  4. Add salt, black pepper, mushrooms, oregano and flour.
  5. Mix well and add 1/2 cup water and cook till chicken becomes tender.
  6. In the end, add cream and your chicken filling in snow ready for lasagna.
  7. For cheese sauce: Melt utter in a saucepan over low heat, stir in flour.
  8. stir and cook for about 2 minutes. Do not brown.
  9. Take off from heat, then gradually stir in milk and continue cooking over low heat, stirring constantly, until sauce begins to thicken.
  10. When sauce start thickening add half cup water if required.
  11. Now cook till the sauce consistency is medium.
  12. Season it with salt and white pepper.
  13. Remove from heat, add grated cheese in it and mix it well.
  14. For tomato sauce: Heat oil and fry chopped onion in it till its soft, add garlic paste and saute for few seconds, also add red chili crushed, salt, 1/2 cup water and tomato paste, mix well.
  15. Add oregano and sugar.
  16. Season with salt.
  17. Cook until nice thick sauce consistency.
  18. To assemble the lasagna: Take a big baking dish and arrange 3 cooked lasagna strips on base.
  19. Put cooked chicken filling on it.
  20. Put some capsicum strips and pour white and red sauce over it
  21. Repeat the second layer with 3 sheets and repeat the layering process.
  22. Sprinkle cheese on top and bake in preheated oven at 190 degrees C for 15-20 minutes or until the cheese is melted and top is golden.
