Punjabi Pulao by Chef Gulzar

Ingredients:

  • Beef 1/2 kg
  • Ginger garlic paste 2 tbsp
  • Onion 2
  • Big cardamom 4-5
  • Fennel seed 1 tbsp
  • White cumin 2 tbsp
  • Whole coriander 2 tbsp
  • Cinnamon 2-3 sticks
  • Star anise 2-3
  • Ghee 1/2 cup
  • Salt to taste

For Rice:

  • Rice 1/2 kg
  • Yogurt 1 cup
  • Bay leaves 3
  • Brown onion 3
  • Vinegar 2 tbsp
  • Small cardamom 8
  • Black pepper 1 tsp
  • Green chilies 6-8
  • Ghee 1/2 cup
  • Salt to taste

Method:

  1. For making beef & stock: Put ghee and onion in pan and fry it.
  2. Now add ginger garlic paste, add beef and roast it nicely until meat and ghee separates.
  3. Now make potli, put big cardamom, fennel seed, whole coriander, white cumin, star anise and cinnamon, put potli in pot, add water as required and cook until meat tender.
  4. Now separate meat & stock and waste potli.
  5. For bhagar: Add ghee in pot, put onion and brown it.
  6. Spread half onion on tissue paper and keep half onion in pot.
  7. Now add black pepper, small cardamom, bay leave and green chilies and roast for 2-3 minutes.N
  8. Now add meat and beaten yogurt.
  9. Yogurt is roasted and ghee is separated, add stock.
  10. When stock boils, add rice, cover it and cook it.
  11. When water of rice dries, put remaining brown onion and vinegar and keep on simmer.
  12. When simmer is completed, dish out it and serve with kabab.
  13. Punjabi pulao is ready.
