Arabian Saffron Pistachio Rice by Chef Gulzar

Ingredients:
- Rice 300 gm
- Mutton 1/2 kg
- Chopped onion 2
- Chopped garlic 1-1/2 tbsp
- Potato 2-3
- Black pepper 1 tsp
- White pepper 1 tsp
- Chicken cube 1
- Saffron 1 pinch
- Bay leaves 4-5
- Butter 1/2 cup
- Oil 2 tbsp
- Salt to taste
- Pistachio almond for garnish
Method:
- For rice: Add oil and bay leaves in pot and roast it.
- Now add rice and water, boil it 1/4, strain it and keep it aside.
- For meat: Add oil and butter in pan and fry chopped garlic and chopped onion.
- Then add mutton, roast it, add black pepper, white pepper and chicken cube, mix it nicely, cook until meat tender and remove it.
- Now mix remaining butter and oil, put in pot, cut potato in katliyan and spread it.
- Then put rice, meat and saffron and simmer it.
- When simmer is completed, dish out it, garnish with boiled almond and pistachio and serve.
