Chocolate Walnut Fudge Cake by Shireen Anwer

Ingredients:

  • Butter 8 oz
  • Coco powder 2 oz
  • Cooking chocolate 4 oz
  • Vanilla essence 1-1/2 tsp
  • Brown sugar 8 oz
  • Baking powder 2 tsp
  • Eggs 4
  • Flour 6 oz
  • Milk 1/4 cup
  • Walnuts 4 oz

For Chocolate Fudge Icing:

  • Butter 6 oz
  • Cooking chocolate 6 oz
  • Icing sugar 12 oz
  • Vanilla essence 1 tsp
  • Cream 3/4 cup
  • Coco powder 1 tbsp

Method:

  1. Preheat oven to 180 degrees C.
  2. First beat butter and brown sugar until light and fluffy.
  3. Now put vanilla essence and eggs one by one and beat it nicely.
  4. Then put flour, coco powder, baking powder, melted cooking chocolate, walnuts and milk in second bowl and mix it.
  5. Now fold vanilla mixture in coco mixture.
  6. Then bake this mixture in two 8 inch greased sandwich pan for 35-40 minutes.
  7. After that, take out cake from oven and chill it.
  8. Now keep first cake on serving platter, put fudge icing and cover with second cake.
  9. Then decorate with remaining fudge icing on top.
  10. For fudge icing: Put cream, vanilla essence, cooking chocolate, coco powder and butter in saucepan and cook until chocolate melts.
  11. Now remove pan from stove, add icing sugar and mix it nicely.
  12. Then chill it so that it becomes hard.
  13. Now take it out and beat until fluffy.
