Sindhi Biryani by Zarnak Sidhwa

Ingredients:
- Soaked rice 1-1/2 cup
- Chicken 1/2 kg
- Chicken mince 1/4 cup
- Salt to taste
- Turmeric powder 1 tsp
- Red chili powder 1 tsp
- Garam masala 1 tsp
- Garlic paste 1 tbsp
- Ginger garlic 1 tbsp
- Yogurt 1 cup
- Oil 2 tbsp
- Ghee 4 tbsp
- Cumin seeds 1 tsp
- Cinnamon 1 inch
- Black cardamoms 2
- Green cardamoms 5
- Cloves 6
- Sliced onions 3 medium
- Potato 1 large
- Green chilies 4
- Mint leaves 2 tbsp
- Saffron 8-10
- Milk 2 tbsp
Method:
- Add salt, turmeric powder, red chili powder, garam masala powder, ginger paste and garlic paste to the chicken and mix.
- Add yogurt and oil and mix and leave to marinate.
- Heat ghee in a pan.
- Add cumin seeds, cinnamon, black cardamoms, green cardamoms, cloves and onion and saute.
- Add chicken mince and stir and continue to saute.
- Break the mince lumps with the ladle as you saute.
- Add potato and saute.
- Add salt, green chilies and chicken and stir well.
- Add mint leaves and rice and stir to mix well.
- Add water and mix.
- When the mixture comes to a boil, reduce heat and add saffron milk.
- Cover and cook till both the rice and chicken are cooked.
