Falooda by Zarnak Sidhwa

Ingredients:
- Milk 2 cups
- Basil seeds 2 tbsp
- Rice noodles 1/2 cup
- Rose sherbet 4-5 tbsp
- Rose ice cream a scoop
For Rose Ice Cream:
- Condensed milk 1 tin large
- Evaporated milk 1 tin large
- Rose green essence 1 tsp
- Red or pink food color 1/4 tsp
- Cream 1-1/2 cups
Method:
- To make the ice cream: Chill both the evaporated milk and the condensed milk tins and then beat well and add rose green essence and red or pink food color.
- Mix well and add in cream and freeze.
- Remove and using a fork keep mixing ice cream so no ice crystals form.
- Do this at least thrice before finally letting it freeze overnight.
- Serve in scoops in the falooda.
- To assemble the falooda: Just before serving place 3 tbsp rose sherbet or syrup in a tall glass, add in milk and a little soaked thin rice noodles and the basil seeds.
- Then add the scoop of rice cream and serve immediately with a tall spoon and a straw.
