Masala Fish Supreme by Zarnak Sidhwa

Ingredients:

For Fried Fish:

  • Fish fillets 1/2 kg
  • Turmeric powder 1 tsp
  • Red chili powder 1 tsp
  • Cumin powder 1 tsp
  • Lemon juice 1 tbsp
  • Salt to taste
  • Oil to shallow fry

For White Sauce:

  • Flour 2 tbsp
  • Butter 2 tbsp
  • Mustard paste 1 tsp
  • Salt 1/2 tsp
  • White pepper 1/2 tsp
  • Milk 1 cup
  • Cheddar cheese 1 cup

To Garnish:

  • Tomato or capsicum deseeded

Method:

  1. Mix all the ingredients except oil.
  2. Marinate fish with this mixture for an hour.
  3. Heat oil in a pan.
  4. Add fish and lower the heat.
  5. Cook till crisp, then turn the pieces and cook on the other side.
  6. Serve hot with white sauce and garnish.
  7. To prepare white sauce: Heat butter and add the flour and stir on low heat till aroma comes.
  8. Add in the salt, pepper and mustard and then the milk very slowly using a whisk son no lumps remain.
  9. Add cheese and then cook till thick.
  10. Pour over fried masala fish and then serve immediately, garnished with strips of deseeded tomato or capsicum.
