Sausages & Tomato Pasta by Zarnak Sidhwa

Ingredients:

  • Dry fettuccine 1 pound
  • Olive oil 3 tbsp
  • Sliced onion 1
  • Garlic 2-3 cloves
  • Sausages 4
  • Quartered tomatoes 2
  • Cherry tomatoes few
  • Vinegar 2 tbsp
  • Salt 3/4 tsp
  • Black pepper 1/4 tsp
  • Fresh basil leaves 1/2 cup
  • Grated parmesan 1/4 cup

Method:

  1. Cook the pasta in hot salty water till all done about 7-10 minutes.
  2. Drain and set aside.
  3. Meanwhile, heat oil.
  4. Add the onion and garlic and cook until the onion softens.
  5. Add the sausage and cook.
  6. Add the tomatoes and cook.
  7. Stir in the vinegar, salt and pepper.
  8. Add the cooked paste, basil and toss gently to combine.
  9. Serve in bowl and top with the parmesan.
