Ingredients:

  • Mutton/Chicken 1/2 kg
  • Chopped tomatoes 3
  • Chopped onions 3
  • Green chilies 5
  • Red chilies 6
  • Garlic 6 cloves
  • Oil 1 cup
  • Tamarind paste 1/2 cup
  • Fennel seeds 1 tsp
  • Onion seeds 1 tsp
  • Turmeric 1 tsp
  • Coriander seeds 1 tsp
  • Chopped ginger 2 tbsp
  • Salt to taste

For Green Chili:

  • White cumin 1 tbsp
  • Coriander seeds 1 tbsp
  • Mustard seeds 2 tbsp

Method:

  1. Roast mustard seeds, white cumin and coriander seeds, grind finely, mix some tamarind juice and salt, mark cut on green chilies and fill it.
  2. Now heat oil in pot, do chopped onion light pink and take out.
  3. Then put mutton or chicken in pot. Together put salt and turmeric and cook it.
  4. When water of meat dries, put pink onion, chopped tomatoes, fennel seeds, onion seeds, garlic cloves, chopped ginger, coriander seeds and red chilies, roast it lightly and put tamarind paste.
  5. Now shallow fry chillies in frying pan, put in salan and keep on simmer on low flame.
  6. Approx after 10 minutes, serve delicious achar gosht with plain rice and chapati.
