Cashew Chicken Salad by Zarnak Sidhwa

Ingredients:

  • Pasta 2 cups
  • Brown sugar 1/4 cup
  • Lemon juice 3 tbsp
  • Vinegar 1 tbsp
  • Cream 2 cups
  • Salt 1 pinch
  • Black pepper 1/4 tsp
  • Chopped celery 2 cups
  • Green capsicum 1/2 cup
  • Chopped onion 1
  • Boneless chicken 3
  • Cashew 1 cup

Method:

  1. Bring a large pot of lightly salted water to a boil.
  2. Add pasta and cook for 8-10 minutes or until all done; drain and rinse with cold water.
  3. In a large bowl, combine brown sugar, black pepper, cream, lemon juice, vinegar and salt.
  4. toss dressing mixture with cooked paste, celery, capsicum, onion and chicken.
  5. Chill until ready to serve.
  6. Mix in cashew just before serving.
