Ingredients:
- Bitter gourd 1/2 kg
- Green chilies 4
- Onions 4
- Fenugreek seeds 6
- Gram lentils 1 cup
- Mustard oil 1/2 cup
- Tamarind pulp 1/2 cup
- Turmeric 1/2 cup
- Onion seeds 1 tsp
- Ginger garlic paste 1 tbsp
- Coriander seeds 1 tbsp
- Red chili flakes 1 tbsp
- Fennel seeds 1 tbsp
- Jaggery 1/2 tbsp
- Green coriander as required
- Salt to taste
Method:
- Peel bitter gourd and mark cut.
- Before washing, add turmeric, salt, jaggery and tamarind pulp and keep for 20 minutes. Then wash it nicely.
- Now boil gram lentils.
- Then heat oil in pot and fry onions.
- After that, put fennel seeds, coriander seeds, onion seeds, fenugreek seeds, salt, ginger garlic paste, some turmeric and red chili flakes and mix it.
- After little roasting, mix fried onion, green chilies and tamarind pulp.
- Now fill bitter gourd with lentil and onion and tie with thread. Keep remaining masala in pot.
- After that, heat oil in frying pan and fry bitter gourd.
- When golden, put in masala pot.
- Now put jaggery and green coriander and keep on simmer for 15 minutes.
- Serve with hot chapati.
