Ingredients:

  • Bitter gourd 1/2 kg
  • Green chilies 4
  • Onions 4
  • Fenugreek seeds 6
  • Gram lentils 1 cup
  • Mustard oil 1/2 cup
  • Tamarind pulp 1/2 cup
  • Turmeric 1/2 cup
  • Onion seeds 1 tsp
  • Ginger garlic paste 1 tbsp
  • Coriander seeds 1 tbsp
  • Red chili flakes 1 tbsp
  • Fennel seeds 1 tbsp
  • Jaggery 1/2 tbsp
  • Green coriander as required
  • Salt to taste

Method:

  1. Peel bitter gourd and mark cut.
  2. Before washing, add turmeric, salt, jaggery and tamarind pulp and keep for 20 minutes. Then wash it nicely.
  3. Now boil gram lentils.
  4. Then heat oil in pot and fry onions.
  5. After that, put fennel seeds, coriander seeds, onion seeds, fenugreek seeds, salt, ginger garlic paste, some turmeric and red chili flakes and mix it.
  6. After little roasting, mix fried onion, green chilies and tamarind pulp.
  7. Now fill bitter gourd with lentil and onion and tie with thread. Keep remaining masala in pot.
  8. After that, heat oil in frying pan and fry bitter gourd.
  9. When golden, put in masala pot.
  10. Now put jaggery and green coriander and keep on simmer for 15 minutes.
  11. Serve with hot chapati.
