Soya Rice by Chef Gulzar

Ingredients:

  • Mutton 1/2 kg
  • Rice 300 gm
  • Onion 2
  • Yogurt 250 gm
  • Green chilies 2-3
  • Ginger garlic paste 2 tbsp
  • Bay leaves 2-3
  • Cloves 4-5
  • Big cardamom 4-5
  • Cinnamon 2-3 sticks
  • Black cumin 1 tsp
  • Black pepper 2 tsp
  • Soya 1 bunch
  • Green coriander 1/2 bunch
  • Ghee 1/2 cup
  • Salt to taste

Method:

  1. Put ghee and onion in pan, brown it and keep it aside.
  2. Now put bay leaves, big cardamom, cinnamon, cloves and black cumin in this ghee and roast it.
  3. Now add mutton meat and roast with ginger garlic paste.
  4. Then put water as required and coon until meat tender.
  5. When meat is tender, strain it, separate stock and waste all whole ingredients.
  6. Now heat ghee in pan, add brown onion and put ginger garlic paste.
  7. Then add meat and beaten yogurt.
  8. After that, put bhagar on stock.
  9. When stock boils, add rice, cook it and simmer it.
  10. When simmer is completed, add green coriander and soya, mix it and dish out it.
