White Cake by Zarnak Sidhwa

Ingredients:
- Caster sugar 1 cup
- Butter 1/2 cup
- Eggs 2
- Vanilla essence 2 tsp
- Flour 1-1/2 cups
- Baking powder 1-3/4 tsp
- Milk 1/2 cup
For Icing:
- Icing sugar 2 cups
- Unsalted butter 1/2 cup
- Water 1 tbsp
- Vanilla essence 1/2 tsp
Method:
- Preheat oven to 175 degrees C.
- Grease and flour a 9x9 pan or line a muffin pan with paper lines.
- Cream butter and add the sugar.
- Beat in the eggs, one at a time, then stir in the vanilla.
- Combine flour and baking powder, add to the creamed mixture and mix well.
- Finally stir in the milk until batter is smooth.
- Pour or spoon batter into the prepared pan.
- Bake for 30 to 40 minutes in the preheated oven.
- For cupcakes: Bake 20 to 25 minutes.
- Cake is done when it springs back to the touch.
- To prepare icing: Combine sugar, butter, water and vanilla.
- Beat low speed to combine, then beat till five minutes.
